Instructions - Muffins
1/2 cup milk, buttermilk or soy milk
1/2 cup orange juice
1/4 cup Highwood Crossing Canola Oil
1/2 cup honey or brown sugar
1 large egg (beaten)
1 tsp vanilla
1 cup fresh or frozen berries, fruit, grated apple or carrot
2 cups Highwood Crossing Muffin Mix
Combine first six ingredients. Stir in fruit with muffin mix and combine
all ingredients in a bowl until moistened. Bake at 400°F for about
20 minutes in greased or lined muffin tins. Makes 12 muffins.
Cooking Instructions - Pancakes and Waffles
Pre-heat griddle or waffle iron on high to 400°F. Combine 1 cup milk,
buttermilk or soy milk, 1 large egg (optional), 1 Tbsp, Highwood Crossing
Canola oil and add to 1 cup of Highwood Crossing dry mix. Let batter
sit for a minute or two then spoon onto a lightly oiled grill. Turn
pancakes once when bubbles form on top. Makes about 10 hearty pancakes.
Serving suggestions: Stir one or more of the following just before
cooking: 1/4 cup of fresh berries, 1 tsp. vanilla or 1/2 tsp. cinnamon.
If batter seems too dry or if you do not use an egg, add a bit more
liquid to compensate. The batter should flow but not be too runny.
