Warm Maple Apple Cobbler
A soothing and tasty comfort food packed with fruit and loaded with opportunities to adapt the basic recipe using what you have available or what is in season.

5 cups Apples, peeled and sliced
1/2 cup Maple syrup
1/3 cup Raisins or other dried fruit
1/2 cup Highwood Crossing Muffin and Pancake Mix
2 tablespoons Highwood Crossing ground Flaxseed*
1/4 cup Granulated sugar
1/4 cup Butter, softened and cubed
1/2 cup Buttermilk
1 Egg
1 tablespoon Vanilla

*1 tablespoon of seeds grind up to the 2 tablespoons of ground flaxseed required for this recipe*


Preheat oven to 350ºF.

In a saucepan bring apples and maple syrup to a boil; simmer 3 minutes or until softened. Add raisins. Pour into a greased 8 inch square baking dish or cast iron pan.

In a bowl combine Highwood Crossing Muffin and Pancake Mix, ground flaxseed and sugar. Cut in butter to make fine crumbs. In a bowl combine buttermilk, egg and vanilla. Pour over flour mixture; stir until just combined.

Drop mixture by large spoonfuls onto warm apple slices. Bake for 30 minutes or until tops are golden and a toothpick inserted in center comes out clean.

Great served warm with ice cream for dessert or for a weekend breakfast topped with yogurt.

Variation ideas: Use a combination of apples and pears or apples and cranberries or plums and nectarines! Add 1 teaspoon cinnamon or lemon zest for flavor boost, or add 1/3 cup toasted chopped pecans for crunch!
