The molasses in this recipe makes these muffins moist and flavourful. A healthy way to start your day!
2 3/4 cup Highwood Crossing Organic Muffin & Pancake Mix
3/4 cup Highwood Crossing Organic Flax Seed ground*
1/4 cup wheat germ
1/2 cup oat bran
1/2 cup brown sugar
1/2 teaspoon cinnamon
1 to 2 cups raisins, chopped dates, nuts, or a combination
3/4 cup blackstrap molasses
1/3 cup Highwood Crossing Organic Canola Oil
1 1/2 teaspoon vanilla
1 1/3 cup buttermilk
*6 tablespoons of seeds grind up to the 3/4 cup of ground flax seed required for this recipe*
Preheat oven to 375ºF.
In a large bowl combine Highwood Crossing Muffin & Pancake Mix, ground flax seed, wheat germ, oat bran, brown sugar and cinnamon. Stir in raisins, chopped dates or nuts.
In another smaller bowl, mix molasses, oil, egg, vanilla and buttermilk.
Add wet ingredients to dry ingredients and mix until just combined. Place combined mixture in greased muffin tins and bake for 20-25 minutes or until tops are firm to touch. Remove muffins from tins and cool on wire rack.
Makes approximately 12-18 muffins.
