Steel-Cut Oatmeal with Apricots and Apples
1 1/2 cups water
1/4 teaspoon salt
1/2 cup Highwood Crossing Organic Steel-Cut Oats or Organic Rolled Oat Flakes
1/2 cup milk
1/3 cup dried apricots, diced
1/3 cup apple, diced
In a medium sauce-pan, bring the water and salt to a simmer over medium high heat. Stir in the oats, reduce the heat, cover, and cook at a low simmer for about 25 minutes.
Stir in milk and cook for 10 minutes more or until the liquid is absorbed but the oatmeal is still moist. Stir in the apricots and apples. Cook about 5 minutes longer, or until heated through and to your desired consistency.
Serve sprinkled with Highwood Crossing Organic Sunflower Flax Seed Granola.
Makes approximately 3 servings.
