Calgary Stampede “Hay Stack” Cookies

(Adapted from Heidi Swanson’s Super Natural Everyday Cookbook by Karen Anderson, Calgary Food Tours / / 403-968-2783 and Penny Marshall, Highwood Crossing Foods)

1 ½ cups mashed banana
1 egg white
1 tsp. vanilla
¼ cup Highwood Crossing Organic Cold Pressed Canola Oil
1 ½ cups Highwood Crossing Organic Rolled Oat Flakes
½ cup ground Highwood Crossing Organic Flax Seed
1 tsp. baking powder
½ tsp. cinnamon
½ tsp. salt
1 cup mini chocolate chips
1 ½ cups long shredded coconut

Mix ingredients together and drop batter by 1 tbsp. onto parchment lined
cookie sheets. Bake @ 350°F convection oven for 15 minutes. Makes 30 -36.
