Flax Seed Crackers

An easy, quick cracker that’s fun to make fresh at home…

1 3/4 cups Highwood Crossing Organic Muffin and Pancake Mix
1/4 cup Highwood Crossing Organic Flax Seed *ground
1/4 cup Highwood Crossing Organic Canola Oil
1/2 cup milk

*2 tablespoons of seeds grind up to the 1/4 cup of ground flax seed required for this recipe*

In a bowl of a stand-up mixer or food processor, add flax seed and mix until blended.

Mix oil and milk and pour in a stream while mixer is slowly going until mixed.

Cover dough and chill 10 – 30 minutes. Divide the dough into quarters. Turn each quarter
out onto a lightly floured board. Roll out very thin to a rectangle 2 mm (1/16 inch) thick.

Cut into 6 cm (2 Ѕ inch) squares and transfer to un-greased baking sheet. Or just roll
and set irregular pieces onto the baking sheet. Sprinkle salt on top of crackers if desired.

Preheat oven to 160° C (325° F). Bake 20 minutes until crisp and golden.

You can turn the crackers over once 10 minutes has passed.

Cool and “crack” into cracker shapes if uncut.

Makes about 64 small squares or if just rolled into pieces and cracked it makes enough
for a basket of crackers.

For variations try adding a small amount of any of the following: chopped chives, poppy
seeds, sesame seeds, grated strong cheese or dried herbs or spices of your choice.
